Weekend Recipes: Steak & Broccoli Stir Fry

There’s absolutely nothing wrong with indulging and having broccoli at the same time. This recipe is tasty, allows for a change of pace in your diet and isn’t bad for you either. Definitely take some time to enjoy.

What You Need

  • 1 cup whole wheat rice
  • 1 lb flank steak, cut into strips
  • 2 tbsp. cornstarch
  • 2 grated garlic cloves
  • 1/4 c. soy sauce
  • Black pepper
  • Extra virgin olive oil
  • 1 head broccoli, cut into florets
  • 4 chopped scallions

How To Make It

Cook rice according to package instructions.  In a bowl, mix meat with 2 tablespoons cornstarch until well coated.In a pot fitted with a steamer basket add 1″ of water. Bring to a boil and add broccoli. Cover and steam until tender, 4 to 5 minutes. In another bowl mix garlic, soy sauce, 1/2 teaspoon black pepper, and 1 tablespoon cornstarch. Proceed to shake well afterwards. Heat skillet over medium-high heat with 2 tablespoons extra virgin olive oil. When oil is hot and almost smoking add meat in a single layer and cook until browned, about 4 to 5 minutes total. (Cook meat in batches to prevent steaming in an overcrowded pan.) Transfer meat to a plate. Stir the sauce and coat meat well, allow to simmer for 2 to 3 minutes. Add beef and broccoli back to skillet to warm through. Serve over steamed rice and garnish with scallions.
