Another quinoa recipe for this weekend, the least healthy out of the three, but the one that packs the most flavor.
What You Need
- 1 cup quinoa
- 2 cups of beef broth
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon ground ginger
- 2 minced garlic cloves
- 1 pound 90/10 ground beef
- 1/4 cup brown sugar
- 1/4 cup low sodium soy sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon crushed red pepper flakes (more for a spicy flavor)
- 2 green onions, thinly sliced
- 1/4 cup green peppers
How To Make It
Place the quinoa in a small pot and cover with beef broth. Bring to a full boil, then reduce heat to a simmer, cover, and let cook for 15 minutes.
While the quinoa cooks, heat the oil in a pan. Cook the garlic, ginger, and green pepper for about 3 minutes, stirring constantly. Add the ground beef and brown completely. Drain the fat. In a small bowl, combine brown sugar, soy sauce, sesame oil, and red pepper flakes Add the soy sauce mixture to the ground beef and let cook for 3-5 minutes to allow the flavors to set. Once the quinoa is done, take off the heat and fluff with a fork. Serve beef over quinoa, top with green onion.
