This fun recipes is one of my favorites, as not only is it colorful–it is absolutely delicious. If you enjoy steak, this is recipe for you.
What You Need
- 2 teaspoons orange rind
- 1/4 cup fresh orange juice
- 2 teaspoons lime rind
- 3 tablespoons fresh lime juice
- 2 tablespoons extra-virgin olive oil
- 2 garlic cloves, minced
- 2 teaspoons brown sugar
- 1 teaspoon chili powder
- Cajun seasoning
- 1/4 teaspoon ground chipotle powder
- 1 (1-pound) flat iron steak, trimmed
- Non stick cooking spray
- 1 cup finely chopped bell pepper
- 3 tablespoons finely chopped red onion
- 2 tablespoons chopped fresh cilantro
- 1 jalapeño pepper, seeded and finely chopped
How To Make It
Combine orange rind, orange juice, lime rind, 2 tablespoons lime juice, 1 tablespoon oil, cloves, brown sugar, and chipotle powder in a bowl, stirring with a whisk. Cover steak with extra virgin olive oil before using Cajun seasoning. Then add steak to mixture, turning to coat. Let stand 30 minutes at room temperature, turning occasionally. Heat a grill pan over high heat. Coat pan with cooking spray. Remove steak from marinade; before discarding remaining marinade. Add steak to pan; grill 5 minutes on each side for medium-rare or to desired degree of doneness (adjust time for your liking). Place steak on a cutting board or another surface; let stand 5 minutes. Slice steak across the grain. Combine remaining 1 tablespoon lime juice, remaining 1 tablespoon oil, and remaining ingredients in a bowl. Will take about 30-40 minutes to prepare and 15-20 minutes to cook.
This recipe yields approximately 4 servings. It will also contain around 480 calories per serving and around 25 grams of fat as well. Each serving will contain over 20 grams of protein as well.
