Sometimes you want to be free of worry over the nutrition of your meal. That’s why this weekend I’m providing you with recipes that are “cheat” meals, but aren’t so bad you will feel guilty after delving deep into the tasty meals. This Rib Eye Steak recipe is one of my favorites.
What You Need
- Two 1 1/4-pound, bone-in rib eye steaks
- Cajun Seasoning
- Black Pepper
- 2 tablespoons extra virgin olive oil
- 3 tablespoons unsalted butter
- 4 thyme sprigs
- 2 garlic cloves
- BBQ Sauce (for light coating)
How To Make It
Cover steak with extra virgin olive oil, evenly on either side. Season the rib eye steaks all over with Cajun Seasoning and black pepper. Let the meat stand at room temperature for 30 minutes.
In a large cast-iron skillet, add olive oil and heat. Add the steaks and cook over high heat until crusty on the bottom, about 5 minutes. Turn the steaks and add the butter, thyme, garlic to the skillet. Cook over high heat, basting the steaks with the melted butter, garlic and herbs, until the steaks are medium-rare, 5 to 7 minutes longer. Transfer the steaks to a cutting board and let rest for 10 minutes. Remove bone from steak (or leave if you choose), coat either side of the steak lightly with BBQ sauce before serving. In total this recipe will make 4 servings and takes around an hour and fifteen minutes to prepare.
Instead of using a cast-iron skillet one can also use a charcoal or electric grill as well to add additional flavor.
