There’s a number of ways to tackle this recipe. Over the next few weeks I’ll deliver several other veggie pasta recipes that you will enjoy. This is one of my favorites!
What You Need
- 1 tablespoon butter
- 2 tablespoons extra virgin olive oil
- 2 chopped bell peppers
- 1 chopped onion
- Black pepper
- 2 sliced zucchinis
- 12 ounces of whole wheat fettuccine pasta
- 4 ounces grated and smoked mozzarella (can add more after serving)
- 1/3 cup basil
How To Make It
Heat butter and oil in a skillet over medium-high heat. Add peppers and onion, season pepper. Cook, stirring often, until almost tender, 10 to 12 minutes. Add zucchini and cook until peppers are tender and zucchini is crisp-tender, 4 to 6 minutes. Also, cook pasta according to package directions. Reserve 1 cup pasta water; drain. Add pasta, mozzarella, basil, and 1/2 cup of reserved pasta water to pepper mixture and toss to coat. Add more pepper if desired. After completed top results with more cheese and basil. It takes between 25 minutes to 40 minutes to prepare.
This dish will only have around 5 grams of fat and 6 grams of protein per serving. The exact amount depends upon the brand used. This recipe yields 4 servings.
