This recipe mixes Asian Zing sauce, with chill and Cajun seasoning to bring new life and zip to saffron chicken. A little higher on the calories than I would like, but still a suitable dinner without having to worry too much.
What You Need
- Greek or plain whole-milk yogurt (I prefer Greek Yogurt, you can experiment with flavors. I used peach.)
- Crushed Saffron Threads
- 1 garlic clove, minced
- 4 (6-ounce) skinless, boneless chicken breast halves
- Asian Zing Sauce
- Chili Powder
- Cajun Seasoning
How To Make It
Preheat broiler. Combine yogurt, Asian Zing Sauce, Cajun Seasoning, and Chili Powder to bowl and mix thoroughly. Add chicken, tossing to coat. Let stand at room temperature for 15 minutes. Place chicken on a broiler pan coated with cooking spray or extra virgin olive oil. Broil for 10 minutes per side, or until the chicken is cooked through and the surface is browned. The recipe should take between 35 – 40 minutes to prepare. If you do not have a broiler, recipe can also be made on a grill or in an oven with adjustments to cooking time.
The recipe results in 4 servings containing around 360 calories, 20 grams of fat, and 40 grams of protein.
